Green and red apples contain vitamin C, potassium, pectin, and are rich in phytonutrients (polyphenols, carotenes and quercetin). Carrots are a rich source of vitamin A and phytonutrients. They also contain vitamins K, C, E, B1, B2, B3, B5, B6, biotin, folate, potassium, manganese, copper and molybdenum. Beetroot contains vitamins C, B6, folate, manganese, potassium, iron and copper. Lemons are super rich in vitamin C, bioflavonoids, limonene and potassium while ginger is a source of the anti-inflammatory compound gingerol.
Carrot juice is particularly rich in the phytochemical beta carotene and phenolic compounds which have been studied for their anti-tumour, anti-inflammatory, anti-oxidant, anti-carcinogenic and anti-aging properties, useful in aiding prevention of many diseases.
