Carrots are a rich source of vitamin A and phytonutrients. They also contain vitamins K, C, E, B1, B2, B3, B5, B6, biotin, folate, potassium, manganese, copper and molybdenum. Lemons are super rich in vitamin C, bioflavonoids, limonene and potassium while ginger is a source of the anti-inflammatory compound gingerol. The spices are added for their powerful active phytonutrient compounds, curcumin in turmeric and piperine in black pepper to help the curcumin’s absorption.
Carrot juice is particularly rich in the phytochemical beta carotene and phenolic compounds which have been studied for their anti-tumour, anti-inflammatory, anti-oxidant, anti-carcinogenic and anti-aging properties, useful in aiding prevention of many diseases.
